  1. Basil Pesto -- Fresh picked basil blended with roasted pine nuts and extra virgin olive oil makes this fromage a savory choice. Robust, this is an excellent choice to toss on pasta. An eight ounce container will cover one pound of pasta. Cook the pasta noodle of your choice, drain - saving about a cup of the hot water. Apply the fromage tossing it thoroughly through the noodles. Add some of the hot pasta water to thin the cheese to your liking. Use only enough water to achieve the desired consistency. Sprinkle some grated parmesan or Romano cheese on top and enjoy.

    Other favorites using Basil Pesto Fromage Blanc: Tuscan style potato salad, foccacia or flat breads, brushed on grilled, roasted or baked chicken or served with fresh tomatoes.
  2. Blue Moon -- Inspired by a big, beautiful harvest moon this fromage has a cult following!  A blue cheese lovers delight use this fromage on top of steak or burgers. Hot wings soar with this on the side and baked potatoes take on a new meaning when topped with this fomage. For a more "pared down" experience serve with pears. Of course crackers, other fruits and veggies are always wonderful too!
  3. Heavenly Jalapeño - St Peter hold on to your halo! This sassy fomage has just enough kick to get your taste bud's attention! Spread this on a flatbread for a whole new experience. Pair with a red delicious apple for a match made in heaven!
  4. Herd de Provence with Lavender - Subtle floral hints of lavender bring an earthy flavor to this French herbing. This fromage is at home brushed on steak, chicken or fish and is versatile enough for pasta or foccacia bread. Ou la la!   
  5. Orange Sunrise - Rise and shine! This versatile fromage offers a sunny surprise. At breakfast pair with scones, bagels, muffins, graham crackers, cinnamon bread or my personal favorite  cooked oatmeal cereal! As a dessert serve with pound cake, angel food cake, short bread,  or assorted fresh fruits. Our favorite pairing is with an orange cranberry pecan biscotti!   
  6. Parsley Chive - Potatoes here we come! Use this fresh flavor for summer picnic potato salads that rock! Baked or quartered potatoes are excellent choices too. As always, crackers, fruit and veggies are great options. And don't forget my niece Gabriella's favorite way to enjoy this herbed variety - potato chips!
  7. Roasted Garlic with Sundried Tomato - Oh my! That is the most common exclamation made by people tasting this favorite for the first time. This is the "Big Daddy" of the fromage flavors and hands down our most popular fromage. Do try this one tossed on pasta. One eight ounce container will cover one pound of pasta. Drain your pasta saving a cup of the hot pasta water. Toss the fromage through the pasta. Use the hot pasta water to thin the cheese to your liking. Use only as much water needed to achieve the desired consistency. Top with some grated parmesan or Romano and serve. Wow your guests with an "over - the - top" presentation by placing this colorful pasta creation in a Tuscan style pasta bowl and top with a few basil leaves.
    Dare to experiment! Try using this fromage on an Italian Muffulatta. Taking a loaf of fresh Italian bread remove the top of the bread horizontally. Remove a small amount of the bread to make room for the meats. Spread a thin layer of the roasted garlic with sundried tomato inside the loaf and on the top that you removed. Fill the loaf with Italian ham, hot or sweet soppressata, capacola and proscuitto. Shred some Emerald Valley Farm Old World Style Aged mozzarella and apply a thin layer of a green olive tapenade. Place the top of the bread back on to the loaf. Wrap the loaf in aluminum foil and bake on 400 until warm. Remove from the oven. Unwrap and remove the top of the bread, add shredded lettuce and chopped fresh tomatoes. Replace the top, slice and enjoy!

  8. Smoked Cheddar - This fromage features Emerald Valley Farm Aged Smoked Cheddar. Subtle but unmistakable hints of hickory smoke make for a pleasant experience when combined with fruit, crackers or veggies. Wow them with the ultimate baked potato experience!  Top a baked potato with some smoked cheddar fromage, sliced bacon, shredded Emerald Valley Farm Old World Style Aged Mozzarella, salt and fresh ground black pepper to taste. Dive in!
